Simple Energy Ball Recipe

One of my favourite things to do is have a tasty snack with my afternoon coffee. There is just something about taking that ten minutes to yourself to regroup and enjoy a little caffeine jolt! I am always trying to find better ways to fill the snack craving (mine and my family) so that we are having something on the healthy side as well as filling. These little energy bites are just perfect and taste sooo good! And the best part? No baking so they are ready even faster! Now that’s my kind of snack.



Ingredients:

*2 cups quick oats

*1/2 cup mini chocolate chips (however I used regular size)

*2/3 cup shredded coconut

*1/2 cup peanut butter

*1/2 cup honey

*1 tbsp pumpkin protein powder (you can use ground flax)

*1 tbsp chia seeds

*14 tsp salt

Mix all your ingredients in a bowl and refrigerate for 45 min.Next roll your mix into balls (around 25-30) and enjoy! You can keep these in the fridge in a sealed container for up to a week, or freeze them. Enjoy!
