Slow Cooker Butter Nut Squash Soup


Now that the weather is really starting to chill off I love using my slow cooker for meals. It's so simple to just throw everything in one pot and let it simmer all day. Plus it makes my life a whole lot easier when it gets close to dinner time and the 5:00 meltdowns begin. Today I am sharing a delicious slow cooker butter nut squash recipe that is so tasty and great to sip on all day when your feeling like a little something. You will need:

- 1 medium butter nut squash peeled, de-seeded and diced up
- 1 granny smith apple peeled, de-seeded and diced up
- 1 white onion chopped
- 2 cups vegetable stock
- 2 cloves of garlic minced and peeled 
- 1/2 cup coconut milk (I used low fat)
- 1/2 tsp salt
- 1/2 tsp pepper
- pinch of cayenne pepper 
- pinch of smoked paprika
- pinch of cinnamon
- pinch of nutmeg

Add everything except the coconut milk to your slow-cooker and cook 2-3 hours on high or 4-6 on low. Once everything is cooked add your coconut milk in and either use a hand blender in your slow cooker to blend everything together or what I did was dump it all in the vitamix, blend then poured it back in the slow-cooker on warm. Season with addition salt & pepper and garnish with a little coconut milk and more smoked paprika!
