Simple & Delicious Protein Pancakes

Today I wanted to share one of my favourite protein pancake recipes. I love meals with lots of protein in them because as a nursing momma I find I am always hungry! These pancakes are great because they are super filling and I usually make them a few times a week for breakfast for the family. It’s nice because everyone can top them with whatever they like and it’s just a simple, easy meal. Now to be honest, a lot of times I don’t measure everything out I just eyeball it, but for the sake of the recipe here’s what you will need:

*1 Ripe Banana

*1/2 Cup Egg Whites

*1/4 Cup Quick Oats

*1 tbsp Flax Powder

*1/2 tbsp Chia Seeds

*1 tsp Cinnamon

This will make 3 good sized pancakes, just double or triple the recipe for a larger batch.

Mash your banana up in a bowl and add in the egg whites. Then add in the rest of your dry ingredients and mix well. Warm your pan on medium heat with some oil of you choice (I use coconut). Pour mixture in and place lid on until the top of the pancake looks cooked enough to flip. Voila, simple and delicious!

Kind thoughts,

Lauren Elizabeth
